The best vanilla cake

This is truly the best vanilla cake ever! Fluffy, soft, silky crumbs with a creamy vanilla buttercream! You won't be able to stop eating it. This classic recipe is perfect for birthday cakes, parties or a baking weekend activity! Let's get to it. 


First you need to gather these ingredients:


For the cake:

  • 2 cups of all-purpose flour 
  • 2 1/2 tsp of baking powder 
  • 1/4 tsp of salt
  • 4 large eggs at room temperature 
  • 1 1/2 cups of superfine sugar 
  • 1/2 cup of unsalted butter, cubed
  • 1 cup of whole milk
  • A big splash of Vainilla Molina
  • 3 tsp of canola oil

For the vanilla buttercream:

  • 2 sticks of unsalted butter, softened
  • 3 ½ cups of powdered sugar, sifted
  • A big splash of Vainilla Molina
  • 4 tbsp of milk


Preparing the oven and pans:

  1.  Preheat the oven to 350 °F / 180°C / 160°C fan oven.
  2.  Grease two cake pans with butter, then cover with parchment paper.


Dry ingredients first:

      3.  Whisk the baking powder, flour and salt in a bowl, and set aside. 


Let's get those eggs aerated:

     4. Beat the eggs for 30 seconds at medium-high speed.

     5. With the beater still going, add the sugar & Vainilla Molina, and keep beating for 8-10 minutes until its volume is tripled.


Moving on to the batter: 

    6. Microwave butter and milk for 2 minutes.
    7. Gently pour the flour into the whipped eggs, mixing it in little by little and beating at low speed for 5 seconds. Keep beating until everything is combined. 
    8. Add the hot milk, Vainilla Molina, oil and 3 tbsp of the egg mixture to the empty flour container.. Whisk vigorously until foamy.  
    9. Pour this new hot milk-egg mixture back into the beating bowl and beat at low speed for 15 seconds.
   10. Scrape the sides of the bowl with a spatula and combine the batter.


Let's bake!

  1.  Pour the batter into the pans, hitting the sides lightly to get rid of any bubbles.
  2. Bake for 30 minutes or until  an inserted toothpick comes out clean.
  3. Remove from the oven and let them cool completely before decorating. 

NOTE: Cool upside-down for a perfectly leveled cake.

For the rich vanilla buttercream:

  1. Beat the butter until creamy. 
  2. Add powdered sugar and beat at high speed for 4 minutes. 
  3. Add milk & Vainilla Molina, and  beat for an extra minute. 
  4. Decorate your beautiful vanilla cake! 


It may seem a little complicated, but trust us this cake is a winner and will last deliciously fresh and moist for up to 4 days!
