Busting a few baking myths

Baking can be hard. From bread and cupcakes to brownies and cookies, each recipe has specific directions that require your special attention. And it's even harder to get perfect results when you rely on misinformation or false tips. 

Whether you believe that opening the oven door is a bad thing or that you must always use measuring cups, you've been influenced by some of the most common baking myths. So, here are some of these beliefs that are actually myths--and the truth about each one.

Myth 1

Opening the oven door will destroy your cake. 

The truth: A little quick peek won’t have any effect on the baking process. Just make sure not to keep it open for long.

Myth 2 

Always use measuring cups and spoons because they are very accurate. 

The truth: Measuring cups can give you 25% of the real quantity you're going for. There's nothing more accurate than a kitchen scale.

 

Myth 3

A preheated oven will always result in a perfect cake.

The truth: It depends on the oven you use. The fan-forced ones don’t need to be preheated because they heat up very fast. It also depends on the baked goods you're making: if the recipe requires less than an hour or less than 300 °F / 150 °C, a preheated oven is not necessary. 






Myth 4

Margarine is better and healthier than butter. 

The truth: Margarine is mostly made of water and it will affect your baking by diluting the batter, resulting in harder cakes and flatter cookies. 

Myth 5

Alcohol will evaporate in the oven, so add a lot of it to the recipe.

The truth: Only 50% of the alcohol may evaporate, so be careful when adding rum or another alcoholic ingredient to your recipe. 

Myth 6 

Adding vanilla extract at the end of the recipe is better!

The truth: When baking in the oven, it's recommended to add high-quality vanilla, such as Vainilla Molina, in the middle of the preparation because the aroma permeates the fatty ingredients, such as butter or oil.
